Marinating fish in Comacchio is a centuries-old tradition that has its roots in the local culture of the Valleys.

The fish, after frying or cooking in the large fireplaces of the Manifattura dei Marinati, is preserved thanks to a tanning still prepared today according to the traditional recipe with vinegar, water and salt. This process gives the fish a unique and extraordinary flavour, making it a typical product and a symbol of the Comacchio area.

The Marinated Fish Festival aims to celebrate the ancient Comacchio tradition of marinating fish, with activities and initiatives that promote this excellent product of the Comacchio Valleys. During the event the following will be organised: markets, tastings, guided tours, music, workshops for children and many other initiatives.
